Highland cattle are slow growing and this is reflected in the beef. It is hard to describe the beef from a mature, grass fed highland … there is low surface fat due to the thick coat, good internal marbling and an excellent flavour profile which is developed over the long slow growing period. The Queen knows this and has her own fold to supply the royal family with beef.
